If your cathedral has a refectory, cafe or other visitor catering do you really know who your customers are and more importantly, what they want to eat and drink?
Findings recently published in
Attractions Management identified that 6.7 million international tourists visited churches or cathedrals in 2011. In total, 22% of last year's 31m visitors went to a religious site. According to the information, a religious site is most popular among Brazilians (55%) followed by Australians and Americans (49%) and Russian and Chinese (45%).
'So what!' you may be saying. However, have you thought about how your visitor cafe or refectory meets the food and beverage needs of these visitors from different countries and cultures? Cream teas and other favourites are bound to be popular, to some extent, but how appealing and relevant is the rest of your menu?
